Linda's vanilla and strawberry pink layer cake with traditional cream cheese frosting + a fun baking party

Hello friends ! We did it ! We organised a dream birthday party and I made a beautiful pink vanilla and strawberry layer cake with four layers for my little princess. - Happy dance ! -

Linda had a wonderful time with her friends, really. They had SO much fun playing all together, baking madeleines with me and decorating cupcakes !

The baking Theme

I was surfing and dreaming about Rosie's beautiful layer cakes when I saw her link to this baking party theme.

Linda loves to bake. That's exactly what I needed.

The cake

We've chosen Linda's favorite flavor for cakes : vanilla. She wanted a pink cake with strawberries.

The vanilla cake recipe is from Swetapolita : Perfectly Delightful Vanilla Birthday Cake. I made it exactly as described.

I added also a thin layer of strawberry jam on top of each cake. I found the cake too sugary with the jam and would try with some fresh strawberries the next time.

We thought the kids would not like buttercream so much, we decided to go for a cream cheese frosting. I naturally went for the cream cheese frosting recipe from the Miette beautiful cookbook.

I can tell you it was a hit ! Even the moms asked me why the frosting was so light and creamy without being to heavy : cream cheese !

Very proud MAMAN. Baking all those cakes was a lot of work and I loved it so so much ! I definitively have a crush for layer cakes.

Perfect foodie cupboard. I can store all my food styling stuff and even use it like a presentoire for a party.

Cream Cheese Frosting

Perfectly creamy cream cheese frosting for a vanilla and strawberry layer cake.

YIELD: ABOUT 650G (3 CUPS)  TOTAL TIME: 10 MINUTES


INGREDIENTS:

450g (2 cups) cream cheese
156g ( 1/2 cup + 3 tablespoons) unsalted butter, at room temperature
125g ( 1 cup) sifted powdered sugar
pink color


DIRECTIONS:

  1. Soften the cream cheese. Put it in a microwave-safe bowl and microwave at 750Watts for 10-seconds intervals until soft, but not melted.
  2. In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and sugar. Beat until smooth and glossy.
  3. Add the cream cheese and mix thoroughly.
  4. Add the pink color and mix slowly until desired color is achieved.
  5. Use immediatey or cover and refrigerate until needed.
